Mango Sorbet

I always wanted to make my own sorbet but just never got around to it. Life always got to busy. However now that I have some time to do it, I regret not doing it earlier. It is so simple to do plus no ice cream machine needed. After scrolling through Pinterest I found this quick and easy recipe on a blog called my dairy of us.

 

How to Make Mango Popsicles:

Ingredients:
2 Ripe Mangoes, peeled and chopped
1 Can of Coconut Milk (I used light but you can use full cream form a creamier texture)
Juice from 2 Limes
4 Tbsp. Honey (add more if your mangoes aren’t sweet enough, just taste and adjust before freezing.)

Directions:
Blend all ingredients together in a food processor or blender until smooth and creamy.
Pour into popsicle moulds. (i used plastic cups I had in the cupboard). The mixture should be thick enough that when you insert your popsicle sticks they will stand up. If they don’t, simply freeze for 30-1 hr and then insert the sticks.

Freeze overnight.

Make it more interesting, here are a few options you can try:

Strawberry-peach sorbet
Mint-infused watermelon sorbet
Raspberry-rosé sorbet
Lemon sorbet
Dip it in your favourite chocolate

The options are endless. Get creative it is your own creation.
